We opened our mother's old drawer and we found forgotten dusted recipes. We gathered forgotten spices and scents from the cretan countryside and we searched for old and new cooking advices. We combined all this with specific's knowledge of eating habits and diet. We created a menu on the base of the traditional diet: "a bit of everything" and "eat what you have". Sometimes we have, sometimes we have not, but the coals are always lit and warm as the hospitality and the heart of Cretan people. Based on olive oil, fresh and local products, we try to offer something new to aftertaste sensation.
